Avolicious Breakfast
If you're looking for a healthy and filling breakfast to kickstart your day, here is one of our absolute favorites. This will keep you full and energetic.

avo and eggs
(2 servings - 4 toasts)
Your choice of toast bread. We recommend rye - it's heart healthy and delicious.
1 ripe avocado
2 eggs
Boil the eggs to your liking. We like them in all forms, so you could choose between runny and firm yolk.
Cut and scoop the avocado into a bowl and mash it up. Click here for an easy way to cut and peel and avocado.
Heat the toast if you want it to be a little crunchy.
Place the toast in a plate
Spread 1/4 mashed avocado evenly on each slice
Split the eggs in two or slice it up or even mash it over the avocado
Season with salt and pepper
